Paleo friendly fish sauce developed as a pure alternative to the commercial version of Nước mắm nhi – the fragrant, first-press fish sauce from Vietnam. Made with only black anchovies from the crystal clear waters of Vietnam’s Phú Quốc archipelago, salted to preserve freshness. The anchovies are brought back to the barrel house and stored for 12 months in large wooden barrels. This provides a clean, natural umami flavor. After fermentation is complete, the first extraction from the barrel is bottled. (You can tell the fish sauce is from the first-press due to the dark amber color, which guarantees that it has not been diluted.)
