The Caprea Collection features single-farm, local, raw goat’s milk aged 6-12 months. Sierra Nevada Cheese Company’s raw milk goat cheeses come in three varieties: Monterrey Jacques, Cheddar, and Smoked Cheddar. Their Cheddar Caprae Raw Milk cheese variety boasts a creamy texture and is pleasantly sharp. Their Monterrey Jacques variety is smooth but maintains the signature goat cheese flavor.

Sierra Nevada Cheese Company’s raw milk cheeses showcase the complex bouquet of flavor resulting from naturally-occurring healthy micro-organisms present in the fresh milk received from their neighboring farm, the Fumasi Goat Dairy.
