Almonds should always be soaked overnight before eating, to break down the enzyme inhibitor found in the brown skin. After soaking, you can remove the brown skin easily. Then dehydrate to remove moisture and avoid molding, or use right away to make almond milk. When the outer skin is removed, almonds are then approved for a low lectin diet, as the skin contains lectins and should not be eaten.
To soak your almonds:
- Place in cold water;
- After ~30 minutes drain and replace soaking water with fresh water, then soak for 8-12 hours more;
- Remove almonds, and use right away or dry in a dehydrator.
Soaked almonds can be refrigerated, but only for a short time because of their high moisture content. For this reason it’s advisable to dehydrate after soaking to decrease moisture levels, unless you are using them right away.
