I’ve had digestive disease (Crohn’s) for over 40 years, and have been recovering from a severe case of environmental illness brought on by multiple toxic exposures over the last 20 years. It’s been a long, slow haul to regain basic functions like being able to eat food without life-threatening reactions, being able to breathe, and being able to wear clothing, sleep in a bed with blankets, and tolerate heating systems. My journey has allowed me to swim in a pool of gratitude every day, so grateful for all I have in my life now. I feel especially blessed to have a deep love for food — and nourishment on all levels — that has led me to create this series of cookbooks.
